Reasons for amino acid promote fruit Coloring
The different colors of fruits are determined by different pigments, mainly including anthocyanins, chlorophyll and carotenoids. When fruits comes to mature , chlorophyll will be destroyed or converted into carotenoids,make the original color of fruits fade ,meanwhile anthocyanins begins to accumulate in a large amount, so that the fruits show really brilliant colors. Amino acids can accelerate the destruction of chlorophyll,At the same time, through regulating the hormone level and soluble sugar content in the process of anthocyanin synthesis and accumulation, the fruit will be rapidly colored.
Soluble sugar is the skeleton of anthocyanin synthesis. The rich content of soluble sugar can promote the synthesis of anthocyanins. At the same time, it combines with anthocyanins to form stable anthocyanins and stores them in cell fluid, promoting fruit coloring.
